手把手教你做芝士蛋糕材料:面粉1杯、牛油70g、冰水2tbs(大匙)、可可粉適量(這個(gè)是我自己加的,因?yàn)橐鲆粋€(gè)巧克力派底來(lái)搭配這個(gè)派,就用了可可粉)做法:牛油切成豆子般大小,面粉過(guò)篩后加入牛油,用指尖輕輕揉搓使牛油混合到面粉中,呈面包糠狀。加一半冰水,做成光滑的面團(tuán),如有必要加入剩下的冰水。(如果天熱,將面團(tuán)放冰箱冷藏一下再處理)在平臺(tái)上撒一些面粉,將面團(tuán)搟成薄片,鋪到抹過(guò)油的排盤(pán)里,去掉多余的皮,用保鮮袋包起來(lái)后放冰箱冷藏30分鐘。派皮可以烤得蓬松或不蓬松。派皮取出后,在上面覆蓋一張鋁箔紙,里面裝上豆子或米,烤箱預(yù)熱180度烘烤10分鐘,丟掉鋁箔紙和豆子之后再烘烤15分鐘或直到派皮變成金黃色。放豆子烘烤可以防止派底凹凸不平,這樣烤出來(lái)的派皮會(huì)有一個(gè)松脆堅(jiān)固的底部。牛油切小塊與面粉混合
